TEA & CHOCOLATE WITH TROTTER'S
This unique class combines our two favorite comforts: tea and chocolate! Learn the basics of food pairing and how to enhance your chocolate dessert with tea! The emphasis of this class is tasting, so be prepared to indulge in tea-infused treats from Trotter's, contrast a variety of tea and chocolate flavors, and learn how to make a low-calorie chocolate treat! You will go home with tea recipes, free samples and a belly full of chocolate! Note: Some of the chocolates you will taste are only available for sale (cash or check) during the class.

TEA BASICS
Designed for the tea novice, this session explores the major categories of tea: black, oolong, scented/flavored, green, white and puerh. We will prepare and taste a tea from each category, demonstrating the dramatically different preparation techniques for each, and experience the incredible range of taste experiences that tea can provide. We'll also talk about the history and production of tea and be open to any tea related questions.

COOKING WITH TEA
Come hungry and learn how to cook with your favorite beverage. Tea is used in many recipes from ice cream and cheesecake to rice and salmon. Participants will help prepare and taste some exciting dishes in this class. We will also present numerous other ideas for creatively cooking with tea. The class will be conducted by Li Hua Song, a second generation chef from Taiwan.

TEA FOR THE COFFEE LOVER
Are you a coffee aficionado who wants to expand your repertoire? Do you have questions about which teas might appeal to you? This class is designed for the coffee lover's palate with an emphasis on some of our stronger brews. The teas you will sample are not your grandmother's "cup of tea." You will experience some of our heartiest teas, including puerh, an aged Chinese tea that steeps up as dark as coffee. This class is not limited to coffee drinkers only - any tea lover will enjoy sampling some of our more full-bodied teas.

TEA AND FOOD PAIRING AT TROTTER'S CAFE
Pairing tea and food can be creative and fun! Impress your dinner guests by offering a different tea with each course. Learn how to do different pairings: like with like, complmentary pairing, accenting a particular flavor, and how to enrich the dining experience. You will taste some of Trotter's best dishes: fresh, delicious, and using only the highest quality ingredients (regional and organic as much as possible). This class will feature appetizers, side dishes, main courses, and desserts - all served with TeaSource teas.

HYPE VS. HEALTH: THE TRUTH ABOUT TEA
Confused by so many reports about tea and health? Is green tea really better for you? What are antioxidants, catechins, and polyphenols and what do they really do for you? How does the caffeine in tea affect the body? How can I get the most health benefit from drinking tea? Bill Waddington, owner of TeaSource and frequent speaker at the Specialty Tea Institute, tackles these questions and more to help you separate fact from fiction. This informative class will explore some basic chemistry of tea, examine media claims regarding what tea really does for you, and decipher hype from health. You will also have the opportunity to taste teas from each category (black, oolong, green, white, dark, puerh).

GONG FU-THE ART OF THE CHINESE TEA CEREMONY
Loosely translated gong fu (also kung fu) means "something which requires great skill and discipline. This session will be a demonstration/class on this ancient Chinese style of tea preparation and service, which promotes the integration of contemplation, relaxation, and focus into everyday life. This session will be conducted by Peiju Liu Picard, who has attained master certification in the art of the Chinese Tea Ceremony.

DETAILS
All workshops are two hours long. Pre-registration is necessary, as sessions usually fill up fast. All classes cost $15.00 (paid in full when registering, except: Tea and Chocolate, Gong Fu and Cooking with Tea classes, which are $20.00). In the event there are less than six participants, this class may be cancelled and fees will be refunded.
