This one starts at the beginning – young buds. Smells like leaves and snap peas drying in the sun. Soft cotton, sweet grasses, and an elemental feel that brings gravity to the cup. Teas this good are tough to come by.
Made on March 28, 2022 by Ms. Hu Ying. A true Fuding Silver Needle from the Big White cultivar growing at 1,200 feet. Made from a combination of sun and in-house withering. Sun withering can only be used in small batch productions. It can clean up the aroma, but also ruin the tea if practiced by unskilled hands. Ms. Hu used to be a professional for preparing tea in ceremony/show, but she’s now studying tea processing from an inheritor of intangible culture heritage – a designation China gives to its very best practitioners who will preserve and pass on this knowledge.

Steeping Instructions
4 grams | 10-12 oz water | 195°F | Steep 4 min.
Traditional Steeping - Use 6 grams of tea in 150ml of 180°F water:
- 10 sec – rinse
- 1st steep – 20 sec
- 2nd steep – 15 sec
- 3rd steep – 25 sec
- 4th steep – 45 sec
- 5th steep – 90 sec
- 6th steep – 3 min
