Buttery aroma and versatile performer. Steep light in the cup for sweet herbs and greens (if you follow our suggested instructions). But it gets pleasantly brothy if steeped a little stronger with a celery-like bite. 

Harvested and produced October 25-26, 2021 by Mr. Lin Quanzhu in Meizhuang village, Huqiu town of Anxi county, Fujian, China. The cultivar used is Jin Guanyin, which is one of the many hybrids of Huang Jin Gui and Tieguanyin. This tea is made in the green style Anxi oolong that has been trendy in both China and The West for a while. In Chinese solar terms, late October is called “Frost’s Descent” and is considered the winter tea season – where frost begins to form in northern China and starts working its way south. The next couple weeks will be the last tea harvests of the year.

Steeping Instructions

4 grams | 10-12 oz water | 205°F | Steep 5 min.

Traditional Steeping

Steep as desired or use the following guidelines: 8 grams of tea in a 150ml gaiwan or teapot with boiling water. 

  • 10 sec. Rinse
  • 1st steep – 30 sec
  • 2nd steep – 30 sec
  • 3rd steep – 40 sec
  • 4th steep – 90 sec
  • 5th steep – 3 min
  • 6th steep – 5 min
