Produced in May 2026 by Masahiro Okutomi at the Okutomien Tea Farm in Sayama Town of Saitama Prefecture. This is a withered sencha made from the Yumewakaba cultivar. The Okutomien Tea Farm is a pioneer of this style. Withered sencha means the leaves are allowed to “wither” after picking in big trays, allowing the air to flow through, reducing moisture content and changing its chemical nature. This is a critical step in the making of black, oolong, and white teas, but is rare in green tea.

Western Steeping Method
Steep 3 grams of tea in 10–12 oz of 175°F (79°C) water for 3 minutes.
Traditional Steeping Method
Steep 6 grams of tea in an 8 oz kyūsu or teapot with 175°F (79°C) water for the following times.
1st steep: 60 seconds
2nd steep: 30 seconds
3rd steep: 15 seconds
