Longjing (“Dragonwell”) originates from the West Lake area of Hangzhou, the capital of Zhejiang Province, China. Its signature flat leaves are pan-fired by hand in a wok to arrest oxidation and keep the leaf green. Though wide-ranging in outcomes, this technique tends to produce green tea that is strong with a bold, fire-like taste many find appealing.
